This workshop provides learners with practical experience in preparing three popular local beverages: Teh Tarik, Teh Limau, and Singapore Bubble Tea. Learners will practise essential techniques such as pulling tea for texture, balancing tea with citrus flavours, and preparing milk tea with pearls.

 

What You'll Learn:

 

  • How to prepare iconic local tea-based drinks – Learners get hands-on practice making three popular Singapore beverages (teh tarik, teh limau, and Singapore-style bubble tea). This includes mastering practical techniques such as pulling tea to develop texture, balancing flavours (e.g., tea with citrus), and preparing milk tea with chewy pearls. By the end, they should be confident recreating these drinks themselves.

 

  • Learn how bubble tea pearls are cooked, sweetened, and prepared for serving. This includes understanding cooking time, texture control, soaking pearls in syrup for flavour, and common mistakes that cause pearls to become too hard or mushy. Learners also explore why pearls must be prepared fresh and how timing affects taste and chewiness.

 

  • Foundations of traditional kopitiam tea – Learners will be introduced to how traditional Singapore kopitiam (local coffee shop) tea is brewed and what makes it different from Western tea styles. They explore how ingredients like condensed milk, evaporated milk, sugar, and water influence taste, richness, and strength — giving them a deeper appreciation of local brewing techniques.

 

  • Local customisation vocabulary and ordering skills – The course explains common local terms (such as teh, teh O, teh C) so participants can confidently customise and order tea like a local — understanding precisely what each variation means in terms of sweetness, milk content, and strength.

 

  • Singapore’s multicultural influence on tea culture – Learners gain insight into how Singapore’s multicultural heritage — shaped by Chinese, Malay, Indian, and Western influences — has affected everyday tea culture. They explore how these cultural interactions influence brewing methods, ingredient choices, flavour profiles, and social drinking practices across communities.

 

  • Understanding ingredients and flavour balance – A core part of the experience is learning how different ingredients contribute to overall flavour and how to balance them effectively. Participants develop sensory awareness and understanding of how sweetness, bitterness, tea strength, and citrus notes interact in local beverages — enhancing both practical skills and flavour appreciation.
